Ingredients for 4 people

  • 2 lobsters
  • 150 ml of milk
  • 300 g of finely ground soft flour
  • 100 g of strong flour
  • 10 g of brewer’s yeast
  • 40 g of sugar
  • 40 g of butter
  • 1 bunch of fresh radicchio
  • 2 vine tomatoes
  • 1 Tropea variety red onion
  • Salt

Lobster sandwich

Preparation

Add the milk, yeast, butter and sugar to a planetary mixer. Mix everything together and then add the flour and salt. Cover the bowl with a tea towel and leave the mixture to rise for approximately 180 minutes.

Form the mixture into small balls, and, having brushed them with a mixture of beaten egg and milk, leave them to rise for another 30 minutes. Preheat an oven, and bake the dough at a temperature of 180°C for 15 minutes.

Wrap the lobsters in baking paper, remembering to add a little water inside. Place the lobsters in the special convex cage tool and cook them in GRILL mode for 6 minutes.

Now, finely chop the chicory, tomatoes and onion.

Cut the previously bread made and place inside the shelled lobster meat, the chicory, seasoned with vinegar, and the tomatoes and onions. Enjoy!
