Salt and pepper the shank, place in a fixed roasting spit and cook in the SOFT 2 mode for 180 minutes; keep warm.
Place the potatoes in a net basket and cook in the FAST mode for 50 minutes. Peel the potatoes and pass them immediately through a sieve; salt and beat with butter and cream.
Slice the shank and serve with the mashed potatoes.
