Ingredients for 4 people

  • 1 veal shank of about 2 kg
  • 1 kg potatoes
  • 250 g of butter
  • 2,5 dl of cream
  • Salt
  • Pepper

Sumptuous puree, that is never runny. Juicy and tender shank, perfectly gelatinous.

Preparation

Salt and pepper the shank, place in a fixed roasting spit and cook in the SOFT 2 mode for 180 minutes; keep warm.

Place the potatoes in a net basket and cook in the FAST mode for 50 minutes. Peel the potatoes and pass them immediately through a sieve; salt and beat with butter and cream.

Slice the shank and serve with the mashed potatoes.
