  • 150 g whole milk ambient temperature
  • 250 g 00 flour
  • 15 g sugar
  • 5 g fine salt
  • 3 g dry yeast
  • 50 g water, room temperature
  • 10 g soft butter
  • 10 egg yolks
  • 750 g eed oil
  • 150 g mustard grains
  • 75 g fresh cream
  • 25 g honey
  • 35 g lemon juice
  • 5 pork frankfurters
  • 5 vacuum compressed cucumbers with white vinegar
  • 15 slices of cedar cheese

Praparations

What would a perfect hot dog look like? At CB, in more than 58 years of experience and after numerous tastings, we collected the best of all recipes and combined in a CB HOT DOG recipe. Do you have all the ingredients? Then begin to pour them all inside the mixer except for the butter that must be added only at the end.

Let the dough rise for about 1.30h. Form a sandwich with the classic elongated shape “hot dog” and let rise again for another 30 minutes.

Bake at 210 ºC for about 15/20 minutes. Now you have in your hands your tasty sandwich that can’t wait to be stuffed.

Now it’s time for the sauce, the added value of any filling. Start by creating a mayonnaise base: just whip the egg yolks with the seed oil. This last ingredient must  be poured flush into a planetary with the whip at maximum speed.

To this point we add some mustard in grains mixed with fresh cream and let amalgamate the whole inside of the planetary to an average speed. Finally add honey, lemon and a pinch of salt. The sauce is ready!

Here we are at the final STEP! Slightly carve the outer sides of the sausage: this simple trick will allow the meat, once in contact with the grill, to open in a spiral to hit the eye even more.

Now is the cucumber’s turn. Peel it carefully, blend the skin with a pinch of salt, vinegar and water and then pass the mixture with a fine mesh sieve. Insert the liquid obtained and the cucumbers cut into rings inside an envelope and packed to the maximum degree of vacuum with a vacuum machine. Wait 15 minutes before reopening the envelope.

Finally proceed with the assembly of the tasty hot dog! Take the bread, cut it on one side and grill it slightly inside. Then accompany him with the “hot dog sauce by academy”, the sliced cedar. the compressed cucumbers and the cooked frankfurter on the griddle. The hot dog is ready, buon appetito!
